Ingredients 1 cup cherry tomatoes, halved 3 cloves of garlic, crushed 2 tbsp extra virgin olive oil 1 tbsp soy sauce or coconut aminos 1 tbsp maple syrup or more to taste 1 tbsp white wine vinegar 1/4 tsp red pepper flakes, optional 1/2 tsp each fennel seeds and ground coriander 1, 15 oz can of cannellini beans, rinsed and drained 1/4 cup parsley, minced 1/4 cup cilantro, minced 2 scallions, sliced Juice and zest of one lime 1 avocado, cubed Salt and pepper For Serving Cooked couscous or quinoa Instructions Prepare couscous by combining equal parts couscous and boiling water (I used 1 cup each and mixed in some bouillon paste for more flavor) in a bowl, cover and let stand for at least 10 minutes
Assemble the sleeve, fold the rectangle in half, then sew each end to create the tube for each piece of the rectangle
