釀造：黑皮諾除梗導入不銹鋼槽，以原生酵母發酵，降低硫化物。夏多內採收後即進行整串榨汁，同樣導入不銹鋼槽，並且添加更低的硫化物比例。最後兩者都會換置於舊的橡木桶，進行最後的培養。
