來自「Les Crayère」地塊，顧名思義，土壤中白堊土比例極高，使其精巧的酸度中略帶礦物鹹感。使用不鏽鋼槽發酵。約48個月後除渣，再靜置6個月後出廠。裝瓶時幾乎不添加任何SO2。浸皮36小時後開始進行壓榨釀造不中止乳酸發酵，不過濾，不澄清。
